It's not turkey. But it is the incomparable Lidia Bastianich. Here she is showing me how to make my grandmother's greatest dish.
Happy Thanksgiving! (Oh, and the conclusion of my near-death Dim Sum story is on the way.)

1. I really enjoyed this video, so much so that I decided to post a comment. I have to agree with you, dough really responds better when you give it a good beating. As someone who has recently made an effort to be a better cook and, in particular, an accomplished baker, I can attest to the curative power of misplaced anger on baked goods. In the book, "Like Water for Chocolate", the main character hypothesized that emotions can translate into the taste of food, and if that's the case, I'm really in trouble. Still, no one has become unreasonably furious when they've eaten my vegan oreo pie (perhaps because they're vegan?), so I'm going to continue beating the heck out of my food.
